More cucumbers, money & time saving tips
Here are 2 picle recipes I received from a friend several years ago. Though they take time they are worth it.
Pickle Relish
Cucumbers – Peel – slice length wise and remove seeds. Grind up enough for 14 cups. My electric food processor works good for this. Grind up 3 large onions and 1 bunch of celery. Chop 2 cups green peppers.
Put all in a large container with 1/4 cup salt and 6 cups of water. Let stand over night. The next morning drain, and do not rinse.
Mix 1/4 cup vinegar, 5 cups of sugar and 1 teaspoon celery seed with 2 teaspoon seed. Boil for 10 minutes. Throw in the vegatables and heat. Pack in jars and process 15 minutes. Makes 8 to 9 pints.
Alternative: If you do not want to use celery grind another cup of cucumber. You can also substitute 2 teaspoon of pickling spice for the celery seed.
Ever Crisp Lime Pickles
7 lbs. cucumbers sliced to 1/4 inch thinkness (I peel the cucumbers) Cover with a solution of:
2 cups hydrated lime
2 gallons cold water
Soak 24 hours
Rinse in cold water and soak 3 hours. Drain and cover with the following solution:
1 Tablespoon pickling spice
1 Tablespoon salt
1 teaspoon green food coloring
Place on stove and bring to a boil. Bail 35 minutes and place in sterilized jars and seal. Processing time of 10 minutes. Best if left 4-6 weeks before serving.
