How many of us doesn’t enjoy a piece of fresh-baked pie warm from the oven? I know I do! We all have our favorite traditional ones; apple, peach, pumpkin, etc. But I want to give you some unusual pie recipes that were the favorites of past generations.

The first one that I will share with you is Huckleberry Pie. Huckleberries are similar to blueberries.

I just ordered some trees, shrubs, & flowers from a mail-order company and have been promised free huckleberry seeds to plant. I’m looking forward to seeing if I have success with growing this old-fashioned berry!

 

Huckleberry Pie

Select pie tins that are to be used & fill them evenly with berries to determine how many will be required. Throw berries in a pan, look over carefully. Remove all stems & wash berries. Drain off all the water from them and let dry in a towel. Wipe pie dishes clean, dust with a little flour in the bottom of each. Line them with a good paste. When ready for the berries, drain them once more & sift flour over them until each berry becomes a little white ball but be careful not to leave a surplus of flour in the bottom of the pan containing the berries. Allow a scant cup of sifted powdered sugar to each pie. Stir well into the fruit and turn the latter into pie plates. Cover each pie with an upper crust & press edges well together for much of the richness of the berries will be lost if the juices escape in baking. Bake about 1 hr & serve cold. Sift powdered sugar thickly over the top.
Note:Flouring berries in this way, while still a little wet from washing will make just enough thickening to counteract the excessive amount of juice these berries are capable of giving off.

 

Green Tomato Pie

medium-sized green tomatoes
nutmeg
1/2 cup butter
1 cup sugar
flour
1/2 cup vinegar

Take medium-sized tomatoes, pare and cut out stem end. Make a biscuit dough. Line pie pan. Slice tomatoes very thin. Fill pan heaping full. Sprinkle over tomatoes nutmeg and 1/2 cup of butter and 1 medium cup of sugar if pan is very deep. Sprinkle a small handful of flour over all, pouring in 1/2 cup vinegar before adding top crust. Bake 1/2 hr in moderate oven. Serve hot…

 

Vinegar Pie

2 egg yolks
2 cups water
1/2 cup vinegar
1 Tbs melted butter
1 1/2 cup sugar
4 Tbs flour
1/2 tsp lemon extract
Line a pie plate with pastry

Combine egg yolks, water, vinegar and melted butter. Add flour to sugar and combine with vinegar mixture. Add flavoring and pour into pastry-lined pie plate. Bake in a hot oven(450) 10 min. Then reduce heat to moderate (350) and bake 20 to 30 min. longer. Cool. Makes 1 one crust (8in) pie.

 

Old Fashioned Buttermilk Pie

3 eggs
3 cups buttermilk
4 Tbs flour
1 1/2 cups sugar
2 Tbs butter
1 tsp lemon ext.

Cook as cream pie and cover with meringue.

 

Good Old-Fashioned Gooseberry Pie(1890)

Top and tail the gooseberries. Put in porcelain-lined kettle with just enough water to prevent burning and stew slowly until they break. Take off and sweeten well. Set aside to cool. When cold pour into pastry shell and bake with top crust of puff paste. Brush all over with beaten egg while hot and set back in oven to glaze for a few min.
