Zucchini – The Versatile Squash

Garden vegetables can be used in many unique ways.

Zucchini squash is a very easy to grow vegetable. You will probably never run out of ideas on how to use it. If you don’t grow any yourself, you will likely have a neighbor or friend who will be more than willing to share with you. It’s a very prolific vegetable.

I have gone through some zucchini recipes that I have gathered through the years that I would like to share with everyone. I tend to have my eyes open for unusual recipes & have been pleased with many of them. I hope you enjoy!

Mock Apple Butter

4 C. Zucchini Puree
4 T. vinegar
1 t. lemon juice
3 C. sugar
1 t. cinnamon
Dash allspice (optional)
2 drops red food color

Peel zucchini, then chop coarsely. Put then put the zucchini into the blender with vinegar. Mix with remaining ingredients stirring occasionally then cook to the desired thickness. Put into jars and keep refrigerated.
