Today, I want to start my cake recipes with a fun recipe called “Vermont Scripture Cake”. It reminds me of Mom because I remember her reading her Bible on a regular basis. During her lifetime she had read through it many times. Her faith in Christ helped her through her life’s journey. May He be your constant companion and friend also!

 

Vermont Scripture Cake

1 cup of butter (Judges 5:25)
2 cups sugar (Jeremiah 6:20)
3 1/2 cups flour (1 Kings 4:22)
2 cups raisins (1 Samuel 30:12)
2 cups figs (1 Samuel 30:12)
1 cup almonds (Genesis 43:11)
1 cup water (Genesis 24:20)
6 eggs (Isaiah 10:14)
A little salt (Leviticus 2:13)
1 Tbs honey (Exodus 16:31)
spice to taste (1 Kings 10:2)

Chocolate Cake(1885)

1 cup butter
3 cups brown sugar
1 cup milk
4 cups sifted flour
yolks of 7 eggs
9 Tbs grated chocolate
3 tsp of baking powder

Bake in buttered larger tins until done. Put together with frosting or whipped cream. If desired make a white cake with the white of eggs beaten stiff and put together alternately with the chocolate layers and chocolate frosting.( Mix ingredients in order given creaming the butter and sugar until very creamy. Add the milk alternately with the flour, then the eggs and chocolate. Sift the baking powder with the flour. Mix well.
Note: I’m assuming you can make the white cake batter following recipe for chocolate cake but adding white sugar for the brown and adding egg whites instead of the yolks.

 

Burnt Sugar Cake

2 1/2 cups sugar
1/2 cup hot water
1 cup butter
yolks of 2 eggs
1 cup cold water
2 1/2 cups flour
2 tsp. baking powder
2 egg whites
vanilla

Put 1 cup sugar on stove in pan dry and stir constantly until very brown. Then add 1/2 cup of hot water and stir. Take 1 1/2 cups sugar, 1 cup butter, yolks of 2 eggs and mix. Then add 1 cup cold water, 2 cups flour. Stir 5 min. Add 1/2 cup flour, 2 tsp baking powder and whites of 2 eggs,well beaten. Flavor with vanilla. Add the above caramel and bake in layers.

 

1,2,3,4, Cake

1 cup fresh sweet butter
1 cup milk
2 cups powdered loaf sugar*
3 cups sifted flour
3 tsp baking powder
4 eggs

Put the ingredients together the same as you would a loaf cake. Place the batter in buttered loaf tins and bake until done. Cool cake. Sprinkle on top a cloud of powdered loaf sugar or ice cake with favorite white icing. Top with fresh grated coconut.* Sugar came in a loaf many years ago. The housewife pounded it and worked with it until it was suitable for baking.

 

Hot Water Cake

1/2 cup shortening(lard or butter)
1/2 cup sugar
1 cup molasses
2 1/2 cups flour, sifted
1 1/2 tsp soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp cloves
1 cup boiling water

Cream shortening, add sugar and cream again. Add molasses and remaining dry ingredients sifted together. Last of all, add boiling water. Bake in a moderate oven(350) about 35 min. Makes 1 (10″) square cake.

 

Hard Money Cake

Gold Part:
Yolks of 8 eggs
scant cup butter
2 cups powdered loaf sugar
4 cups flour
1 cup of sour milk
1 tsp soda
1 Tbs cornstarch
flavor with lemon

Mix in order given.

Silver Part:
2 cups powdered loaf sugar
1 cup of butter
4 (scant) cups flour
1 cup of sour milk
1 tsp soda
1 Tbs cornstarch
whites of 8 eggs, beaten stiff
Flavor with almond or peach mix.*

Put in buttered pans alternately, 1 Tbs of gold to 1 of silver until pans are 3/4 full. Bake in moderate oven. * Use almond or peach flavoring.
