Georgia’s Kitchen: 100 Year Old Pie

Today I wish to continue with old-fashioned pie recipes. Since there are several, I will get right to them. I hope you enjoy them as much as I enjoy sharing them with you.

 

One Hundred Year Old Pie

1 scant cup brown sugar
1 egg
1 1/2 Tbs flour
1 heaping Tbs butter
pinch salt
1 cup milk
nutmeg

Beat well. Then add milk. Pour into unbaked crust. Sprinkle nutmeg over top. Bake at (325) until firm.

 

Pork Apple Pie

8 – 10 tart apples peeled cored and sliced
20 pieces of fat salt pork- cut the size of peas
3/4 cup sugar(maple sugar preferred*)
1/2 tsp cinnamon, 1/4 tsp nutmeg
1/4 tsp salt
1 pkg. of cream cheese
1 Tbs thick cream

Fill a deep dish with apples. Mix salt pork, sugar, spices and salt. Sprinkle the mixture over the apples. Cover the pie crust. Cut slits for steam to escape. Bake in a hot oven (450) for 10 min. Then reduce heat to moderate (350) and bake 30 to 35 min. longer. If crust becomes brown, cover with brown paper so that it will remain a golden brown. While pie is baking blend cream cheese with thick cream and allow to become firm in refrigerator. Serve pie warm with a slice of cheese.

* Note: I don’t believe you can buy maple sugar any more. Brown sugar should work fine. Some may want to experiment with using maple syrup to replace the sugar. Other adjustments with thickener may be needed.

 

Apple Sauce Pie

Stew green or other ripe juicy apples pared and cored. Mash to a smooth compote. Sweeten to taste. While hot stir in a tsp of sweet butter for each pie. Season with grated nutmeg and a pinch of cinnamon. When cool, fill your crust. Either crossbar the top with strips of paste or bake without a cover. Eat cold with powdered sugar sprinkled thickly on top.

 

Mock Mince Pie

1 cup rolled cracker crumbs
1 cup vinegar
1 cup water
1 cup raisins
1 cup molasses
1/2 cup butter
1 tsp cinnamon
1 tsp cloves
1/4 tsp salt
2/3 cup sugar

Cook slowly a few minutes until it is the consistency of mince meat. Bake between 2 crusts, following directions for baking mince pie.

 

Cranberry Raisin Pie

1 cup cranberries-coarsely chopped
1 cup raisins-coarsely chopped
1 cup sugar
1 Tbs flour
1/4 cup boiling water
1/8 tsp salt
1/4 tsp vanilla

Line pie plate with pastry. Mix sugar, flour and salt: add water and vanilla, then raisins. Beat smoothly and add cranberries. Turn into pastry-lined plate. Top with lattice of pastry strips. Bake in hot oven (450) 10 min. Reduce heat to moderate (350) and bake 30 to 40 min. longer. Makes 1 two crust 8 in pie.

 

White Navy Bean Pie

2 cups navy bean pulp
1 cup evaporated milk(undiluted)
2 Tbs cornstarch
1/4 cup water
1/2 tsp nutmeg
1/2 tsp cinnamon
3/4 cup sugar
3 egg yolks
3 egg whites

Cook the beans until very soft. Put them through a sieve to have 2 cups pulp. Mix cornstarch with water; add spices to sugar. Mix with the bean and milk mixtures. Add beaten egg yolks. Put in an unbaked pie shell and bake in a hot oven(450) for 10 min. Then reduce heat to a moderate (350) and bake 25 minutes longer or until set. Remove from the oven and top with egg whites beaten stiff with 3 Tbs sugar. Then return to oven until delicately brown. Makes 1 one crust 9 in pie.

This is where I will stop today. Next week I will continue with more old-fashioned pies.
